Se volete sorprendere i  vostri amici o preparare una cenetta romantica per il vostro lui o la vostra lei, potete optare per un piatto che ritroviamo spesso sulle tavole degli italiani, molto apprezzato in ogni stagione e relativamente semplice da preparare: gli gnocchi fatti in casa.

Come fare a preparare i classici gnocchi di patate? I tempi di preparazione variano dai venti minuti alla mezz’ora di tempo, quindi gli gnocchi fatti in casa sono un piatto che potrete preparare anche se non avete molto tempo a disposizione. La ricetta originale degli gnocchi di patate prevede l’utilizzo di pochi e semplici ingredienti: patate (meglio se a pasta gialla), farina, uova e sale. Vi serviranno poi alcuni strumenti essenziali, ovvero una spianatoia di legno o di marmo, dove poter spianare i vostri gnocchi, un pelapatate, una pentola e un passaverdure.

Per fare gli gnocchi di patate fatti in casa prendete una pentola, aggiungete dell’acqua e salatela con una presa di sale grosso. Una volta raggiunta l’ebollizione, aggiungete le patate con la buccia e fatele bollire per 15 min. circa, fino a che non saranno cotte; potete verificare il livello di cottura con una forchetta.

Aspettate che le patate si raffreddino (per velocizzare la cosa potete passare le patate sotto l’acqua calda), quindi togliete la buccia e tritate la polpa con il passaverdura, oppure schiacciate la polpa con una forchetta.

A questo punto, sulla vostra spianatoia preparate una fontana di farina dove inserirete le uova e il sale; amalgamare il tutto ed infine aggiungere le patate schiacciate. Lavorate l’impasto fino a che non risulterà omogeneo e asciutto e create poi delle strisce di impasto dello spessore di circa 1 cm, che poi andrete a tagliare in piccoli pezzettini, grandi quanto la misura che vorrete dare ai vostri gnocchi di patate.

Lasciate riposare gli gnocchi per circa 20 min. e quindi fateli cuocere in acqua salata bollente per qualche minuto. Il condimento dei vostri gnocchi fatti in casa potrà essere a base di pomodoro e basilico, o burro e salvia con del buon parmigiano, oppure pesto o crema di noci.

Esistono varianti più light dei classici gnocchi di patate, o  ricette indicate per chi soffre di intolleranze alimentari, ovvero gli gnocchi senza patate, a base di sole uova, farina e acqua, che hanno una consistenza più morbida rispetto alla versione con le patate e consentono di risparmiare molte calorie; ci sono poi gli gnocchi senza uova, altrettanto leggeri e più facilmente digeribili. La loro preparazione è la stessa illustrata sopra, eliminando gli ingredienti che non volete o non potete assumere o che volete evitare.
